We convened the 5th meeting of La Ligue Gourmand. We dined in Emma Lake’s re-assembled Studio and welcomed new members to La Ligue.

The event had a decided lake feel with the following menu:

• Miso Soup of the North
rich duck broth, miso soup with scallions
• Greenberg Salad
A delicious, crisp, iceberg wedge salad with a creamy dill lemon dressing
• Pickerel Cheek “Escargot” on Mushroom Paté Toast
• Ricotta Cavatelli & Duck Ragu
• Baba au Rhum with Maple Custard, Chantilly Cream & Pecan Praline brioche pastry soaked in rum syrup
Megan’s menu considers her experiences at Emma Lake. Namely her uncles bringing home duck from the hunt, fishing for pickerel, and if the day went right a stop for maple pecan ice cream cones.

Also, she revives the classic iceberg wedge salad as the Greenberg salad. Clement Greenberg was one of the most important contemporary art leaders when he arrived at Emma Lake in 1962. On his recommendation, major NY modernist heavyweights appeared at Emma for decades to come.

As reference to Jaq Pine, a new character to emerge in the Saskatchewan Maritime Museum lore as of late, Megan prepared a Northern take on escargot. A reference to the snails that played a major role in Jaq Pine’s harrowing life or death pursuit of the mapping and exploration of Sulphur Mountain
